What does a nozzle do?
The nozzle controls the amount of air inside the serve. The higher the number on the nozzle, the more air that is added. The more air you add, the higher the yield. However, if you add too much air, this can lead to LO warnings and cause the soft serve to spatter. Contact the NISSEI Service Center for more information on the proper settings for your ice mix.
What is viscosity and how do I configure it?
Viscosity reflects the resistance in the freezing cylinder. The higher the resistance experienced by the stirrer in the cylinder, the colder the ice cream. This means viscosity determines the temperature and hardness of your ice cream. You can set the viscosity on your touchscreen or with the + and – keys on your soft serve machine. Consult the user manual for information about how to set viscosity on your machine.
My milkshakes are too runny or inconsistent
Follow these steps to resolve the issue:
- Check whether the ‘AIR’ switch has been activated.
- Check the shake-water control valve (turn left for more water, turn right for less water).
- Check whether the mixer pump works properly and disassemble and clean it if necessary.
- Install a smaller nozzle and assess the result after serving 20 to 25 ice creams and 15 to 20 milkshakes.
- Check if there is enough milkshake syrup in the syrup containers.
My milkshakes are too thick. How can I make better milkshakes?

If your milkshakes splatter when you pour them, first check if the ‘AIR’ switch has been activated. Then check whether the mixer pump works properly, and disassemble and clean it if necessary. Our instructional videos show how this is done.

My soft serve is too runny and flaccid. What should I do?

- Install a larger nozzle and assess the result after serving 20 to 25 portions of soft serve and 15 to 20 milkshakes.
What should I do if soft serve squirts out of the tap opening?
- Check if the machine is set to ‘Run’ and whether the ‘AIR’ switch has been activated.
- Is ‘LO’ visible on the display? Follow the steps mentioned under the question ‘LO is showing on the display’.
- Use the pre-start button after the machine has been idle. This is the white button to the right of the control panel. Keep the button pressed for at least two seconds until numbers appear on the left-hand display.
My machine does not serve ice cream or milkshakes

‘LO’ is showing on the display
Check the following:

What should I do if the ‘AIR’ light on my machine is flashing?
- First check if the mixer pump works properly. Disassemble and clean the mixer pump if necessary. Our instruction videos show you how this is done.
- The cylinder may need to be filled and may not be pressurised. Activate the mixer pump.
The light next to ‘Replenish Mix’ does not switch on or only briefly
This could be caused by various things:
- Your top bowl needs to be cleaned and de-scaled. When doing so, pay extra attention to the silver cap next to the air pump.
- The level pin in the top bowl is missing (in older machines).
The pump in the top bowl is making a noise; what should I do?
This indicates that the mixer pump may have been installed incorrectly. Disassemble, clean and assemble the mixer pump in the correct manner. In the meantime, replace all O-rings on the mixer pump. Our instruction videos show you step by step how to correctly perform all required actions.
